single serving sweets

I have a recipe for really amazing chocolate chip peanut butter cookies (all clean eating, btw!), but the recipe makes about 28 cookies and I find that they disappear wayyy too quickly.  I’m trying to save the cookies for special occasions and make one-serving sweets for everyday desserts:

– hot cocoa

– frozen fruit

– tea with honey

– mini apple crisp

– mini mug cookie dough

– oatmeal with peanut butter and honey

Any other suggestions?

This afternoon I chose the clean eating hot cocoa.  It’s easy: 1 cup milk, 1/2 cup water, 1 T. unsweetened cocoa powder, and 1 T. honey.  Microwave the milk, water, and honey together until hot; then stir in the cocoa powder.  A dash of cinnamon on top is delicious, too.
